On Saturday, I made Red Beans with a whole ham bone & also a pot of French Green Lentils. The lentils were spiced with garam masala & a tiny bit of the roasted ham.

If I do say so myself, they were very good.

I usually put spinach in with the lentils & not ham!

Why are baby limas not part of the poll?

I made apot of 12 bean soup last week, with a stock from a fried turkey. It was out of sight!

Succotash is one of my favorite dishes, but not the version served in New Orleans. You see, back home succotash is made with lima beans and corn, cooked in milk with a little half and half. Just before serving you put in a pat of butter and some black pepper. Almost like a chowder. The first time I ordered succotash in a restaurant was at the Monteleone Hotel and when I was served a dish of tomatoes with lima beans you can imagine my surprise. I have since learned to appreciate the tomato version, but still can't convince myself to call it succotash.

Also, my favorite bean is the lima, or the white bean, cooked down with a good ham bone served over rice.
