Beans & Rice
Besides a big ol' pot of soup, a big ol' pot of lima beans has been something I've been wanting to do lately. It made me think how I like them-- and white beans, too-- maybe even better than red beans & rice.
Do you have a preference? (Blame Nan-- she mentioned lima beans.)

Re: Beans & Rice
Red beans with ham & sausage would be my favorite, followed by white beans & stewed rabbit. I'll eat lima but I have never cooked them myself.
I like kids. They taste like chicken.

Re: Beans & Rice
Tough to choose so I went with traditional. I love frozen baby limas (cooked with bacon and onions) and frozen black eyed peas (cooked with smoked turkey necks and mustard greens) too.

Re: Beans & Rice
Whenever I smoke a turkey I use the carcass, wings and legs (if any are left) for stock and meat then make a couple of pounds of large limas with plenty of pickled pork.

I love a good pot of blackeyes, or great northerners, or navies. Especially when made with so me pickled meat and sausage.
I HATE lima beans. I was forced to eat them as a child and now they taste like lumps of sand. I love the beach, but don't want it for dinner. So keep your limas.

Re: Beans & Rice
LOL EAC!
I like traditional red beans but never cook them.
I have made my family's version of succotash twice in the last month and have enjoyed it immensely!
I basically fry some ham seasoning, remove it from the pan, add some oil and saute an onion or two then dump both in a crock pot and add frozen corn and limas, a can of diced tomatoes and salt and pepper and let it cook all day. I eat it over brown rice about twice a week. YUM.
Back to the beans...we eat yellow mustard on our red beans and our white beans. Anybody else?

I like all beans. Total yum. That succotash sounded good too. I'll have to try it.
Now this is more like it.

Re: Beans & Rice
I love most beans, but Baby Limas, Black Beans, Pintos & Red Beans are my favs. Not necessarily in that order!
Re: Beans & Rice
I voted for Red, but I also like black beans. Black Bean soup is a fave of mine.
