Likely quite salty. Unless you want to maybe sacrifice up enough veggies or whatever to make a soup out if it to find out. You could cook some more cabbage in it, if you're not tired of cabbage by now, 3 days post-St. Paddy's. I'd probably just dump it.

Throw a bag of dried Navy Beans in it. Yummy. (That soup with a Rueben is a wonderful dinner.... better than the original boil, as far as I'm concerned) :)

If it's too salty, dump it..... you're just out about a buck!

My immediate first thought was white beans!
And I'd only use some of it.
I think I'd freeze it in pints & use accordingly to cook beans.
I think it would be good in black beans too.

A veggie mock version of Feijoada is also a thought.
Might come out really nice if you substitute carrots, bell peppers & onions for the meats.
