.....a gallon or so left-over corned beef cooking broth?

Likely quite salty. Unless you want to maybe sacrifice up enough veggies or whatever to make a soup out if it to find out. You could cook some more cabbage in it, if you're not tired of cabbage by now, 3 days post-St. Paddy's. Throw a bag of dried Navy Beans in it. Yummy. (That soup with a Rueben is a wonderful dinner.... better than the original boil, as far as I'm concerned)

If it's too salty, raw potatoes will take care of that.

My immediate first thought was white beans!
And I'd only use some of it.
I think I'd freeze it in pints & use accordingly to cook beans.
I think it would be good in black beans too.
A veggie mock version of Feijoada is also a thought.
Might come out really nice if you substitute carrots, bell peppers & onions for the meats.
