Dinner on Sunday

Ok, no one seems to be posting about food these days. I realize we've all been busy with the storms..but what did you have for dinner today?

We spent the day working in the yard...weedeating, leaf blower, power washing the drive and patio...a day of power tools.

I made spaghetti for dinner...the house still smells like garlic.

How convenient that you'd ask this on a Sunday that I cooked!....sorry I didn't see it yesterday, I was in the kitchen.:)

I made individual Beef Wellingtons with Fontina Risotto, Brocoli au gratin and Chocolate Cherry Cobbler. Enjoyed tremendously with a 2004 Artesa Cabernet.

Dinner was BORING- chicken tenders and quesidillias from bar by the house. Lunch was some good eating though as the social function I was attending had food from Hillbilly Barb-q. Excellent pulled pork sandwhiches and ribs.

I had breakfast for dinner. Bruce's Sweet Potato Waffle full of bacon lardons topped by butter and Steen's cane syrup and a big glass of milk

Roasted bone in, skin on chicken breasts served with homemade blue cheese dressing and extra spicy crystal buerre blanc for dipping. Caesar salad . Back to low carbing after a week of excess in NY/NJ.

oven "fried" eggplant (cut in circles) and angel hair pasta (I rarely fix pasta, I'm not a huge fan of it)

Well, original plan was to smoke a pork butt all day while doing yard work. Then DH tells me friends are coming over for the Saint's game and that ruined my plans. Started the pitt at midnight and put the butt on. Had pulled pork sandwiches with sweet and sour slaw, corn pudding and lemon meringue pie. Had to break out chips and salsa and edemame during the game too!

I made a pot of black eyed peas and a skillet of cornbread. Served the peas over the corn bread and drizzled the whole thing w/ Steen's molasses. It was really good!

I had a fabulous piece of seared/roasted wahoo, served with a sauce I like to make for grilled/seared fish). I use white wine, orange juice, a little seafood or chicken stock, lemon juice, salt, black pepper, hot sauce, white pepper, touch of sugar and K-Paul' salt free seasoning, with a little finely diced onion and hot pepper. Reduce the hell out of it. Can add butter if you must (at the end), but no need, really, if you reduce it to the right consistency. Great!
