This article appears in today's nola.com, and I am interested in opinions on both the concept of fried chicken and waffles as a dish AND how it is handled at the New Orleans restaurants that have it on the menu.

About a year ago we had fried chicken and waffles at Matt and Naddies. It was delicious, and i look forward to having it again.

Never had Fried Chicken and Waffles. But back in early times, when "mom" still did the cooking for me, Chicken and Waffles was a taste treat. The dish was made using chicken bits, removed from the chicken carcus after one or two previous family meals (in those days mom's roasted and stuffed a whole chicken). The chicken bits were then placed into a "white sauce", very delicious, for which I never got the recipe. Final heated mixture spooned over freshly made waffles (not previously frozen).
I'll give the FC&W a try, but I can't see them being better than mom's version.

I've had the chicken and waffles at Emeril's (available at lunch). The chicken was well seasoned albeit a tad salty. Chicken /waffles worked well w/ slaw and crystal syrup. The chicken and waffles at Cuvee should be taken off the menu. Just awful.
