Really Good Beef

So, last week we were wondering what to do for mothers day. After communicating with my five brothers, it became apparent that only two would be there, including me (A third opted out for the LSU game and three were out of town). My dad had returned from Key West (was on his sailboat) for the weekend (he went back today to bring his boat back to its normal port of Destin)

So, anyway, the brother who would in town said he wanted to take mom out (he did not know dad would be back in town). I said, its the worst day of the year to eat out, let sdo somehting at her house. So, he says I have this whole prime rib eye in the freezer. We decided to defros tit. He brought it to me about 11am Sunday morning. It was fully defrosted.

I took it ot of the cyovac and rinsed it off. the dried it. I poured osme olive oil on it, then sea salt, cracked black pepper and dried tarragon. I got a fire gopion in my BGE. Added some hickory to the hard charcoal. Got it regulated to 350 degrees. Put the beef on at 11:50. Did not even check it for 90 minutes (1:20). Lowered temperature to about 250 for another hour. Took it off at 2:20. We ate about 30 minutes later (had tented the roast with foil, in a pan). We had a simple sald, then the beef, with mushroom, smashed potaotes and green peas (all done by me).

Well, to put it simply, the beef was fabulous. My mom, sdad and brother all said it was the best beef they had ever had. I would not argue with th at. Outstanding. It literally melted in your mouth. I can't wait to do it again.

I never did test it with a thermometer, or anyting. I just knew it was going to be right, and it was. Wow!

Can't go wrong with a smoke-roast cook in the Egg. I'm gonna do a hot-n-fast flank steak tonight for dinner...I'm still feeling out my Egg's capabilities.
