Went to the cheese store this morning:
GJETOST: Norway. Soft dark brown cheese. Looks and feels like dark caramel. This is the second strangest cheese that I have seen. Made from the whey of cow and goat’s milk. Slight sweet scent. Slightly salty caramel taste. Salty finish. Would recommend to try for the experience. $9.50/lb.
DUBLINER: Ireland. Firm yellowish cheese. Grainy texture. Cow’s milk. Very nice sweet cheddar taste. Slightly dry texture. Wonderful sweet cheesy finish. Would recommend everyone try this one. $10.00/lb.
SARDINIA GOLD: (AKA: Fiore Sardo, Pecorino Sardo, Sardo) Sardinia. Hard grainy whitish cheese. Sheep’s milk. Slightly grassy scent. Nutty piquant flavor. Very slight musty, dry finish. Would recommend to anyone. $13.00/lb.
ARDRAHAN: Ireland. Soft yellowish cheese. Cow’s milk. Musty barnyard scent. Great savory musty flavor. Slightly sweet corn taste on the finish. Would recommend to anyone who enjoys a pleasant musty cheese. $19.00/lb.
OTTAVI TOMME CORSE: Corsica. Hard yellowish gold cheese. Sheep’s milk. Very musty scent. Salty on the front. Very sweet grassy middle. VERY buttery finish. Would recommend to anyone. Do not let the scent scare you off of this one. $27.00/lb.
BRILLO DI TREVISO: Italy. Soft white cheese. Cow’s milk. Very strong red wine scent from the rind. Slightly sour red wine flavor throughout. Pleasant creamyness. Would recommend to anyone. $22.00/lb.
ZAMORANO: Spain. Hard white cheese. Churra sheep’s milk. Very sweet slightly gamey scent. Nutty, gamey slightly sour flavor. Sweet gamey flavor on the finish. Hard to describe aftertaste. Would recommend to anyone. $16.00/lb.
FOUGERUS: France. Soft yellowish cheese. Cow’s milk. Very subtle earthy scent. Pleasant salty, earthy flavor. Stored with ferns on the rind to add flavor. Pleasant salty finish. Would recommend to anyone. $18.00/lb.
SAINT PETE’S SELECT BLUE: Minnesota. Soft blue cheese. Cow’s milk. Sweet blue cheese scent. Very sweet on the front. Very salty on the finish. Would recommend to anyone. $16.00/lb.
