When I did them last night, the skins were crispy like chips. So good. I ate the left overs at lunch today...YUM!

Making these tomorrow night with a steak and balsamic brussels sprouts. Dominic has asked me to make a few of 'em with Parmesan cheese.

I did these potatoes a few weeks ago with some potatoes that were left over from a crawfish boil and my family loved them.

Got those babies boiling on the stove right now. Can't wait to try them. Those pictures look absolutely delicious. I'm grilling some pork chops in a citrus rosemary marinade so I'm thinking they'll make a great side.

i did these tonight.
i brushed with bacon fat, then hit with s&p/ diced chives/ tiny dollop(sp?p of sour cream.
very good.
served with a whole roasted herbed-chicken & roasted carrots.
the chicken was roasted on a carrot/celery/garlic/onion rack w/ stock
& wine.....blended up the 'rack'> filtered> melted a pad of butter> serverd
as sauce. mmmm....
simple, perfect, and fed the family for under $20.

Mucho thanks to JAG for sharing this recipe. They were delicious even though I probably didn't use as much salt as I should have (oversalted a dish this week and have been a little gun shy since). I'll definitely put this in the side dish rotation.

Grins. we are a potato loving bunch! I'm also doing these tonight. Grilling some pork chops, have the green beans on the stove already..then the potatoes.

These look great! I may never make regular roasted potatoes again!
