Commander's gumbo on food network

Post by jodyrah »

It will be featured on a best of America special...don't know when since it was filmed Monday. Chef Tory prepared foie gras and duck gumbo. My son said it was really good and really rich. Chef personally prepared a 4 course meal for the crew, again per son, simply outstanding...best meal he's ever had at CP. Oh yeah, he made them boudin balls and gave them the rest of the gumbo to take home.

Glad to see Commander's gumbo is getting its due. After all, it is a more identifiable New Orleans landmark than the Superdome and/or the Saints.

I agree with your first sentence,TR but disagree with your last. Maybe that statement would have made sense as little as 5 years ago but not today.

Seems like you take a page out of Tom F's handbook. Atta boy!

Unfortunately this foie gras gumbo will not be available to the general public b/c it is not cost effective. It was made with a large quantity of foie (like equal to the amount of onions).

Shizzle! It may have been good, but it seems like a waste of foie gras to me.

Chateau du Lac did a foie gras/duck gumbo as a special and it was also fantastic and very rich. I don't know how often they repeat it.

I own at least 5 copies of that handbook.
