Interesting article that gives some history and current status of the po boy. I like how they talked about newer shops like Mahoneys and also a Katrina recovery shop like Zimmers. I am not sure about the claims for doing the po boy 'like they did in the past' though. I cannot help but wonder if some places would have used bagged lettuce if that was a viable product 'way back when'.

LOL....having a festival to save the po'boy....yes only from a writer from New York. Doesn't he know we use any "excuse" to have a festival?:D

Healthier? Well yes, if you count "calories from fat." What about the other categories, Ms. Nutritionist? Although I do love now being able to rationalize that a roast beef poboy is healthy.

I guess any ink about New Orleans and its food is good. But to say we're on the verge of "monoculture" and losing our identity, this coming from NYT, a dying breed, the newspaper?!?
