How long will Serrano keep?

I have about 1/2# sliced that I picked up at Martin's last week. How long will it keep in the frig....can I freeze it?

Whole Serrano hams-- typically kept unrefrigerated-- should be consumed within about 6 weeks after you first start slicing into them, assuming you follow recommended storage guidelines. Already sliced, kept in an airtight package in the refrigerator, I estimate 4-6 weeks would not be a problem. I probably would not attempt freezing without vacuum sealing, and even then, maybe not. I could see vacuum sealing and freezing a half pound boneless chunk, though.

I quite often Foodsaver block cheeses, using extra bag material, so I can slice open, use some, and reseal in the same bag.
