duck legs

Cooler weather has given me an envie for cassoulet...but I want to make my own duck confit. Whole Foods used to carry duck legs, but on my last few visits, I couldn't even find ducks, nevermind just legs. Anyone know of a (local) source for ducks or even just duck legs? TIA.

Fresh or frozen? Last time I was there looking for ducks, I could only find whole, frozen ones. Are the ducks in the meat case, or over in the poultry-pho-noodles-side case on the wall by the bakery items?

Well, I only saw frozen. By the bakery area in the frozen case.
But that doesn't mean they don't have fresh ones, as I wasn't looking for one.
Are you looking for just killed ducks?

I don't know any store that sells fresh duck, at least not in the city.
Maybe the Butcher Block could help you, but not sure.

No, not freshly killed--more like fresh-thawed-previously-frozen (like most poultry). I've never seen frozen packs of just legs, but that would suit my needs as well.

When you find your duck legs, can you post where you got them along with your recipe. I'm in a cassoulet mood too.

A long shot, but you could call Frank and Marna Brigtsen and ask them where they get their duck. They are super nice people and if Frank has a source he may share that info with you.

Hong Kong has plenty of duck and duck pieces. WF had fresh whole ducks Saturday night when I was there.

All I have ever seen for the most part is frozen.
Around Thanksgiving & Christmas, I've seen thawed ones.
But I don't remember where.
Just a thought . . . if you are a regular at a specific store, why not ask them to thaw one for you. I'd give it 2 days to go from freezer to refrigerator & thaw out.
Not exactly sure why you don't want to thaw it yourself, but if you asked me in my present situation, I wouldn't be able to myself . . . so just thinking about your original question.

Its not that I don't want to thaw it out, just that I'm looking for the hind ends, not whole ducks. I'd like to confit a dozen legs; what on earth am I going to do with a dozen thawed breasts?
