Steak sandwich w/roasted red pepper gorgonzola mayo

My favorite for this is flatiron. Sirloin works too. Not nearly as good with flank.
Mayo (puree in processor):
1 C mayo
3/4 jar roasted red peppers
1/2 C gorgonzla
1/4C shallots, chopped
Add and pulse:
1/2C fresh parsley
s & p to taste
Marinate steak (fresh herbs, oil, garlic...)then grill.
Let sit 5 min, slice thinly and toss with:
1/4C olive oil
2T. minced fresh parsley
1T minced fresh thyme
1T. minced fresh rosemary
red pepper flakes/salt to taste
NOTE: while meat rests, slice ciabatta in 1/2, brush with oil, grill 'till toasted.
Assemble the sandwiches with arugula, baby spinach or watercress. Top with steak and mayo.
