Ever make homemade eggrolls?
I was thinking of buying some eggroll wrappers and making eggrolls at home. I had some Southwest style eggrolls the other day that got me thinking about what I could do. I suppose they have to be deep fried though, huh? Any advice out there or should I just go for it?

Go for it. Put a little water around the edges to keep them from opening up in the oil. Watch that they do not explode while cooking.

JAG,
I work with several Vietnamese and during the holiday one of the wives brings Vietnamese fried eggrolls. So I tried it one time. But I used the wrong rice paper. Mine blew up in the deep fryer. Make sure that you use the correct rice paper (assuming that you're making Vietnamese rolls). I was told that there was a frying symbol on the package though I've never seen it. Good luck and if you figure it out let me know. I could eat a dozen of them easily.
Oh, and if you don't have a recipe for the filling I'll ask at work.

I was just going to wing-it, so EAC if you have recipes or advice, I'll surely take it. I just made a Hong Kong Market run today, then I came up with the idea, so it'll probably be another couple weeks before I actually do this anyway...as you can tell I'm a planner...lol

Re: Ever make homemade eggrolls?
I made them a while back, and just winged it from a recipe I saw on Food Network. The filling had shredded cabbage, ground pork, onions, and some seasonings, garlic, fresh ginger, s & p, I believe. They were much better than the average chinese restaurant. I am not a big fan of egg rolls, so I have not tried them since. Good luck and happy cooking.
PS I am a big fan of Hong Kong market and go there often. The sprouts, cilantro and other produce used in asian cooking are really fresh and a good bit less expensive than my regular grocery stores.

I also winged mine. It was more trouble than it was worth for me. Glad I did it, don't want to do it again. Sorta like when I made my own tamale's in the husk. OMG, took me hours. It was really good, but not worth the trouble.

Yvette, I felt the same way about the time I made stuffed grape leaves for a party. They were great but geeze, I should have just bought them.

My experience is the same: way more trouble than they're worth.

Re: Ever make homemade eggrolls?
Several years ago when I was in college...(oh hell..22 years)...where did the time go?? Shakes my head! My best friend and I got into chinese cooking one summer. We had a Chinese cookbook and worked our way thru the book. The eggrolls were wonderful the SECOND time we made them..the first...they had a blowout..we didn't know how to roll them correctly..didn't seal them properly..a big ole mess.
From now on..when I crave eggrolls..I go buy them. To me..they just weren't worth the trouble.

I've made them and yeah they were better than what you buy (I made Chinese style)but not really worth the effort. Fried meat dumpling (pot stickers) are another matter. 1000 times better.
