4 pound whole chuck roast
1 bunch cilantro (diced)
8 oz pepper jack cheese (shreaded) (GOOD pepper jack cheese)
Salt and Pepper
A few limes
A little Olive Oil
Buns
1 ripe avocado
1/2 cup mayo (egg whites and more oil if you want to get fancy)
Cayenne Pepper
1 - Cut the whole chuck into cubes and pass through a food grinder twice.
2 - Combine meat with healthy dashes of salt and pepper and 1/2 of both the cilantro and cheese. Form into hamburger patties and refrigerate for one hour
3 - In a blender add the remaining cilantro, a tablespoon of olive oil, the mayo, a dash of cayenne and the juice and zest from one lime. Blend and refrigerate.
4 - Grill burgers to your preferred temperature, also, brush the buns with olive oil and toast on the grill.
5 - Finish the burger with the spicy cilantro-lime "aioli" and garnish with a slice of avocado.
