I like to make croquettas.

Take your mashed potatoes & beat an egg & mix together with some freshly chopped parsley. Make a patty of the potatoes & fill with seasoned (green onions, celery, bell pepper, garlic, etc)ground beef. You can either do this inside your hand like a taco & fold the sides closed (pinch them) or make a patty fill & top with another patty. Make the patties oblong rather than round.

You can dip in an egg wash, then Italian breadcrumbs & pan fry in butter.
You could probably do it without butter in a non stick pan, but I never tried that before. Baking might work too.

I grew up on these. They are wonderful.

If I can figure out how to post a pic, I will. I took one last time I made them.

café au lait wrote:I have leftover mashed potatoes often, and I reheat them by just adding some additional butter and evap milk to bring them back to their original consistency. Sorry I don't have any creative way to use them - we love them just the way they are. :)
This works for me as well. I am a mashed potato junky.

A bit heavy for summertime, but I use left-over mashed potatoes to make potatoe dumplings to go with sauerbraten.
