What's in your freezer?

Consider this a South Louisiana Public Service Announcement:

Every year at the start of hurricane season, I do an inventory of my freezer and swear to myself that I'm gonna eat outta my freezer until it's empty. During K, I lost:

2 tuna loins
several quarts of homemade shrimp stock, duck stock, crawfish stock and chicken stock
several packs of peeled, deveined shrimp I CAUGHT!!!
fish filets of various types (snapper, redfish, trout, drum) I CAUGHT!
backstrap
AND 2 lbs. of handpicked boiled crab meat

My insurance paid me for this stuff, but you know, you can't put a price on fish/shrimp you caught and crab you boiled and picked.

So, right now in my freezer I have:

3 quarts of peeled, deveined shrimp
8 flounder filets
6 redfish filets
2 swordfish filets
a shrimp stuffed artichoke
a gallon of trout filets
2 drum filets on the half shell
1 dozen deer tomales
and some refrozen chicken necks waiting for the next crabbing trip.

Time to eat up.

I WILL NEVER LOSE MY FREEZER AGAIN!!!

I didn't even replace my large upright deep freezer after Katrina. I vowed that I would never have more than the meager freezer of my side-by-side fridge/freezer in the kitchen will hold. We had a whole wild pig, an HUGE amount of shrimp, countless cuts of various fish caught by us and friends (snapper, speckled trout, redfish, etc), cooked quarts of gumbo, chili, soups, etc.

But now even the freezer in the side-by-side is packed. Good idea. I need to inventory it and start using what is in there!

Thanks for the reminder, dawlin.

I have various sausage by AMATO'S, a whole natural turkey, a smoked duck & some odds & ends. Not too much, but enough.

BTW, back in the day, I'd get Dorignac's to saw a raw turkey in half.
Much easier to smoke & esp for 2 people - it was more than enough.

However, this turkey came from Whole Food & is fully cooked in the original cryovac packaging. I'd love to take it back to Whole Food & have them saw it in half, but NOT on a raw meat machine. Does anyone else have any ideas?

We're in the midst of house repairs & no way we can entertain.
That would be the easy option.

I'm "eating down" my freezer contents, too. Somehow I ended up with a bunch of frozen limas & peas, homemade pho ga, several containers of cooked lentils, and a bunch of (homemade) turkey burgers, plus a whole bunch of seasoning meats (andouille, tasso, salted pork, jerky, etc). When on earth did I buy the family pack of frozen naan? And who sneaked in the tater tots?

We have been bagging ice out of our ice machine and storing it in our older chest freezer in the back shed. We also have most of our things vacuum sealed and plan to "boil" our food if we lose power. We have stocked up on gas cylanders and also plan to keep one ac unit and one freezer going if possible with the generator. We gave away most of our food during Katrina to the fire house (from the restaurant) and took a lot of things with us or gave away to neighbors when we left. We were lucky to be able to clean fridges and freezers and then leave and not have to come back to a mess.
