Deviled Eggs

Since I'll no doubt have some eggs leftover from being dyed, I figured I'd make deviled eggs to take to the family Easter Sunday. I like deviled eggs if their done well, but I've never made them myself. Anybody got a go to recipe? Thanks!

Myself, I just mash up the yolks with mayo and a little mustard. Paprika for garnish.

During one holiday party, I added canned crabmeat..... you couldn't even tell it was in there.

6 hard boiled Eggs (large)

3 tablespoons mayonnaise or salad dressing

1 tablespoon sugar

1 teaspoon mustard (honey mustard is great!)

1 teaspoon vinegar

salt & pepper to taste

paprika (optional)

OR

6 - hard-cooked eggs

1/2 - cup Parmesan cheese

1 - teaspoon horseradish

1/2 - teaspoon salt

1/2 - teaspoon dry mustard

1/4 - teaspoon pepper

3 - tablespoons salad dressing or mayonnaise

1/2 - teaspoon paprika

1/4 - cup black olives, sliced

HOT.

Either one is yum.

Mine is similar to Nanette but frequently I follow my SIL and add some chopped really crispy bacon to the yolk mix. A little finely shredded sharp cheddar never hurt anyone, either.

mayo, sweet pickle relish, and paprika and top w/parsley.
or add a touch of curry for interest, hold the pickles and paprika, add chopped red grapes and walnut pieces, and sprinkle cilantro on top.

...creole mustard, mayo and a bit of finely diced green onion, and celery mashed into the yolk, thinly sliced pimento olive for garnish and added flavor.
