manchego cheese

I bought some manchego on Wednesday night that was in the refrigerated section at The Cellars. When we got home, my husband carried in the box of booze and I didn't realize he didn't put anything up. I asked him about it tonight and the cheese was still in the box. It was aged 6 months, so I'm thinking it's okay to eat but does anyone know?

Before the days of refrigeration, many fresh cheeses were smoked and aged to preserve them. I'd say go for it, Laura! I hope y'all didn't forget the quince paste!

what's happening Man-chego? it should be good to go with some Spanish Red, olives, and almonds...enjoy!

Try making one of Laurentino's tapas. A crusty piece of bread, some serano ham, manchego and topped with a good briny black olive. And a Priorat to wash it all down.

Had some last night...... not with quince but a Restoration Ale. I've gotten into a habit of buying little chunks of cheese and snacking on them.
Stopped by Whole Foods last night. I'm so glad I don't live closer to it. $145 for 1 bag of groceries. Of course, that includes two filets, lamb chops, 4 different cheeses and New Orleans Ice Cream for hubby and mango freeze for me. Oh yeah, and more Restoration Ale.
