yep, just american cheese...did a grilled cheese with meatloaf in it..it really was yummy.

Last week I made a chuck roast stuffed with so much garlic, along with potatoes, onions, carrots, and lots of gravy. We had left overs last night.

Tonight we are having baked potatoes with toppings which will include butter, cheese, sour cream, and the left over beef (shredded) and onions. I like to bake the potatoes directly on the oven rack to get a really crispy skin, after poke 100 holes in it with my old grandma 3 prong fork to let the steam out and rub the potatoes with olive oil and salt. Remember to put a pan on the rack under the potatoes to catch any oil that drips.

Tomorrow I am fixing beans and putting in all the left over gravy with the water to cook the beans.

I love it when I can use one meal for others and not waste anything.

I'm attempting to make my mom's chicken and dumplings. Think I'll just do cooked carrots as a side..I found a recipe for bourbon glazed carrots that sounds good...just not sure how it will go with chicken and dumplings..reminds me more of a side for a pork dish. Oh well...live and learn. Doug will either be bragging on the dumplings tonight or eating a cold leftover meatloaf sandwich.

This week's dinner menu:

Monday - cabbage rolls, mashed potatoes, Caesar salad
Tuesday - Thai turkey burritos, snap sugar peas, sliced melon
Wednesday - shrimp creole and roasted asparagus
Thursday - taco soup and watermelon
Friday - smorgasboard comprised of warmed leftovers

grins..I wish that I was that organized...I go to the grocery store with an idea in my head of what I want to fix...but come home and just cook whatever comes into my head.

What is taco soup?

Ok, not sure what I did..but the dumplings were pretty close to being disgustingly chewy. Sooo being the resourceful lady that I am...I scooped them out...threw them away and threw in a package of frozen noodles. The carrots smell great. I'm thinking I will have to try this with sweet potatoes next time. I'm just kind of candying them...butter, brown sugar and bourbon...then I threw in some orange juice for liquid. We'll see how they turn out. But, my house smells great!

I was at the neighbors' this weekend, and they were making "cheater's" chicken and dumplings. Instead of making scratch dumplings, they used strips of flour tortillas dropped into the bubbling stew. I tasted it, and while I'm no fan of Sandra Lee the Semi-Ho, those faux dumplings were pretty good.

What is taco soup?
It's a simple recipe, with a consistency more like a chili than a soup.

Gound beef (I use ground turkey) browned with onions, celery, bell pepper & garlic
1 can each of kidney beans, black beans, and pinto beans
1 can corn
1 can tomato sauce
1 can rotel
1 packet of taco seasoning
1 packet of ranch dressing mix
1 cup of water
chopped cilantro to taste
top with grated cheddar cheese

My children love it and it's (relatively) low carb/low fat.

This is probably the first day in years that I have no idea what's for dinner tonight. We're going to hear music in the Point this evening, so it'll need to be a quick fix. This is so weird... must be the full moon.

I made a meat sauce today...so dinner will be easy...spaghetti and a salad.
