Saturday night I made some BBQ skrimps with some hot french bread. Yum!

Sunday we took a lazy day and just hit up Izzo's for some nachos and quesadillas.

Friday night I cooked pan seared peppered beef filet with roasted potabella mushrooms and yummy small red potatoes (seasoned and roased in oven til soft inside, then split and fried in canola oil til crisp outside). Too good. It's why I don't eat steak out. I definately do it better at home than any restaurant.

Last night, Thai pork loin. I had bought a whole loin (4.5 pounds). I cut off about 1.5 pounds and am marinating that for grilling tonight). I trimmed and cubed about 3 pounds, which I dusted in flour and seasonings (black/white pepper, chili and garlic powders and salt. pan fried in canola and sesame oilsfor about 5 minutes. removed, Made a roux from pan drippiungs and additonal flour. Removed roux from pan and cleanded pan. then sauteed onion and red and orange bell peppers in sesame and EVO oils. Added minced garlic after other veggies had softened. Immediately after garlic was added (well, almost immediately), I added 2 cans of reduced sodium chicken stock (14 oz cans) and heated to simmer. Added some green onion and cilantro, then pork pieces. Added about 6 tablespoons of the roux I had made (fairly dark), then another can of stock. Simmered for about 45 minutes, then added one jar of thai peanut satay sauce and more cilantro. Simmered for another 30 minutes or so (I was basiclaly holding the dish waiting for diners at that point.

Served with chopped cilantro and green onion garnish (I would like to have had chopped peanuts, or peanut brittle and maybe some bean sprouts, but did not have any) over pecan rice (without the wild rice and seasoning packet.

I don't know if I would have killed for this, but I likely would have maimed for it. It was a replication of a dish Ms. Turbodog had cooked in Destin last summer on the opening night of the Olympics. We had a house full of college and hihg school kids and they dubbed the dish "Olympic Pork". My attempt was every bit as good as I remember hers being. Can't wait to try it again (of course, I will play wth it and try to make it better).

Chiming in late with this, but I've been kinda busy.
My friends made birthday dinner for me: fried chicken, mashed potatoes, sliced tomatoes, corn and chocolate chess pie. Yum!
At one point in the festivities my friend Carla suddenly cracked up laughing. She had just realized I drove a thousand miles north to Wisconsin to have a VERY southern meal!
Great food, great friends and great weather. Highs in the low 70's and lows mid 50's. If the winters weren't so damed cold I'd move here.
