My favorite is the Pleasures of Chinese Cooking published in the '50's by the late Grace Zia Chu. She was the head of the China America Institute and taught cooking in NYC. I checked Amazon and you can still get it. It uses mostly American ingredients and is very basic. Millionaire Chicken is a gem.
