why no skin on the skirt steak? i had it there once but dont recall if the skin was on or off.

It is offered both ways. The skin on is extremely tasty but just not my preference. I think it's fair to call it "tough" whereas the "skinless" will melt in your mouth. If you had 2 slabs of tender, juicy, wonderfulness, you had it w/out skin.

BTW, I love this thread LNS...great idea! I have my thinking cap on right now, so many choices, so many restaurants.

I definitely like it both ways. Skin on & skin off.
The trick is to get a dining companion who will let you order for them.
Get both & you get a total spectrum taste treat.

Most of my dcs like skin off better. Skin off is chewier, but I wouldn't call it tough.
Skin on is like crack & you may actually feel a little high.
