Found a recipe by jodyrah for a great onion preperation to plate under your steak or pork chops. Had a go at it tonight and thought it was great.

Try this recipe for Gorgonzola vidalia onions. So good you might just eat this and leave the steak. English serves it with ribeye or NY strip. PREHEAT OVEN 450. 4 Vidalia, Bermuda, Walla Wall or Texas sweet onions, unpeeled. PUT IN ROASTING PAN OR OVEN PROOF SKILLET SPRINKLE WITH: 1T. olive oil, 2T. chopped fresh rosemary (or 2t. dried), 1t. kosher salt, 1/2 t. black pepper. ROAST 20 min. REDUCE HEAT 250, ROAST 45min. PEEL WHEN COOL. THINLY SLICE. LARGE SKILLET, MED HEAT, WHEN HOT ADD: 2T unsalted butter, roasted onions, 1/2C. smoked ham, chopped. COOK TILL LIGHTLY CARMELIZED 8min. ADD: 1C. heavy cream, 2t. fresh rosemary, chopped, 2T scallion greens. COOK TILL MIXTURE BEGINS TO REDUCE, ABOUT 5min. ADD: 1/3C Gorgonzola, crumbled. TO PLATE: Slice grilled steaks on the bias serve on top of Gorgonzola onions.
