Low carb dish
I am looking to bring a friend who is diabetic some food. I really don't have time to cook. Is there somewhere that has prepared low carb pre-cooked dishes? Langenstein's? Whole Foods? Any suggestions. She and her tween aged daughter both have diabetes. There has been a death in the family and I know people are bringing her things but I would like to try to bring something that is actually good for them since they are probably not focused on their diet right now! Any help would be appreciated!

low carb = lean protein + veggies. Pick up grilled chicken breasts, salmon fillets, etc. and pair that with some mixed grilled veggies or grilled asparagus, or broc&cauli, etc. and you'll be good to go . . . .

Many veggies are not low carb. Cauliflower, beans, cabbage, onions, eggplant, carrots...

The vegetables to avoid would be starchy veggies, which include corn, peas, and potatoes, of course. (Carrots somewhat, but are still better than those other starches.) Beans, of course, are also starch, so much so that I wasn't even thinking of them when I said "veggies." :-)
But cauliflower, cabbage, onions, and eggplant are definitely non-starchy veggies and qualify as "low-carb" . . . . .

"Low carb" has come to be a sort of generic umbrella term that many take to mean "little or no carbs at all", but it might be better to call it "low impact carb". What the OP is really looking for are foods with a low GI (glycemic index). Low GI foods have less impact on blood glucose in a given time frame vs. higher GI because their carbs are complex and/or they have a fiber content that slows the body's conversion of their starches to sugar. The list presented here, http://www.nutricoach.net/low_gi_foods.html, shows where different foods fall on the GI. Broccoli, cauliflower, and eggplant are fine; sweet potato somewhere in between (fiber); mashed potatoes, definitely no.

Rotisserie Chicken and a Caesar salad kit (they can skip the croutons) or a bag of salad and some good dressing (watch out for sugar in the ingredients.)

Beans are low impact carbs due to the amount of fiber. Southbeach is a good guide for low impact carbs.
Now this is more like it.
