The Galley has generally been my standard for commercially boiled crawfish. For takeout, I've always gone to Bucktown, primarily Schafer and Rusich or Dennis' (Metairie). But KJean's, while always good, has really hit their stride this year. Consistent and delicious.
First of all, they offer "select" crawfish. While I understand this is probably anathema to New Orleanians, I am willing to pay a bit more ($1/lb) for bigger crawfish. The regular crawfish are still boiled equally well.
One thing I noticed when i bought a sack of live crawfish from them a few weeks ago - when I purged them, the water was almost clear the whole time. They had already been washed. I think a thorough cleaning job contributes to the consistent quality of their boiled crawfish. Fixins available and tasty. Though slightly more expensive than market price, still highly recommended.

You don't really purge (using salted water) your crawfish, do you?

I picked up 16 pounds from Kjean last night ($2.99/lb) and they were fantastic.
