Leftover Jambalaya made with sausage, chicken and shrimp, surrounded by breakfast link sausages, topped with two fried eggs (over) and a portion of salsa.

Tasted good for breakfast - twice. Now what should we call it? :confused:

Well, this all came about because my wife doesn't like leftovers to be around very long in the fridge. :whip:

Being of partial German ancestory, I guess the winner is Jambalaya Holstein. :toast:

Reminds me of a local Hawaiian dish called the Loco Moco

"There are many variations, but the essential loco moco consists of white rice topped with a hamburger patty, a fried egg, and brown gravy. Variations may include chili, bacon, ham, Spam, kalua pork, Portuguese sausage, teriyaki beef, teriyaki chicken, mahi-mahi, shrimp, oysters, and other meats"
