Watermelon Ginger Cocktail

When I tire of margaritas and want more kick than a Pimms, I make up a pitcher of these... great poolside. Recipe is for 1 cocktail but make several, they go down easy. Although the recipe came from the TRUVIA site, I use splenda...it's sweeter and dissolves better.

combine in a blender:

1 packet splenda
1T fresh lime juice
3 2" cubes seedless watermelon
1/4t. ginger, grated
2T silver tequilla (I use 2 shots)

pour into ice filled shaker, strain into champagne flute

Weirdo-rama! Someone gave me a small watermelon last weekend and I was sitting here trying to come up with a recipe to turn it into a cocktail. And here I am cruising the forums and low and behold.....your "watermelon ginger cocktail". This is what I'm currently thinking:

Puree watermelon w/ simple syrup. Strain.

Muddle 1 lime & 1 lemon wedge w/ some mint leaves
A healthy glug of Tito's vodka
Watermelon puree
Shake, shake, shake....
Top w/ splash of ginger beer

Sounds good however, the mint may overpower the watermelon. This was the first time I used fresh ginger in a cocktail and it made the drink. Cheers!

The watermelon turned out not to be very sweet, so it looks like it'll merely be one layer of flavor as opposed to the dominate flavor.

I used fresh ginger and rosemary in a cocktail a few weeks ago to great effect.
