At one time, I thoght Mowata Store had the best boudin around (and very good sausage products, as well. I thought maybe the quality dropped off a little when Bubba opened the restauranty next door to the store. Have not tried his products in a while, but need to. He is a true renaissance man, and a gifted cajun musician.

The sausage (pork) I got was very good. Good smoke, fat to lean ideal and mildly spicy. The boudin however was wet and mushy. A style I do not like.
