If you're coming from someplace like NYC, that has great steakhouses routinely serving dry aged primed with a nice crusty char, you will probably be disappointed in Dickie Brennan's and Delmonico. Go to La Boca and take Jag's menu recommendations. It really is delicious.

I use them for several dishes: spare ribs in garlic and black bean sauce, lobster sauce, as a change instead of hot bean sauce for eggplant in yu-xiang sauce. I have a recipe for stir fried spicy clams in black bean sauce that I want to try although I may hold off till I visit the Jersey shore early...

Fermented black beans

I went up and down the aisles at Hong Kong market, no luck . I finally asked and was told they don't have them. Does anyone know who does? FWIW, they carry Goya Valencia rice for paella. It's considerably cheaper than Bomba with great results.

Jag, His dinner sounded good to me as well. Lamb is not my husband's favorite. I was hoping for something that would entice him...like a tasting menu or at least several interesting apps. I check their site regularly for menus. It's been down a really long time.

Sounds good however, the mint may overpower the watermelon. This was the first time I used fresh ginger in a cocktail and it made the drink. Cheers!
