Re: strange night at A Mano

I have not been there, and upon hearing that, will not go there. I wont be going to Olive Garden either, but there are plenty of good restaurants that have pepper grinders. Thatis too much attitude for me. As someone who can hold his own in any kitchen, I do not need to go eat anywhere that the chef...

Re: Squeal BBQ

The lack of a regional identity infers a lack of familiarity. Therefore, opening a Q joint here is not going to be the same as opening one in Austin, KC, St.Louis, Charlotte, etc., You open one in any of those places you just blow and go--you know the accepted parameters and you do your thing. Here...

Re: Grilling on Hibachis, BGEs, etc.

I do all kinds of stuff on my BGE. I am not part of any BGE cult (hell, I don't even rea dtheir forum). However, I do love the pit. It takes some getting use to, and you can't do volume on it, but except for those things, its great. Did burgers (big and thick and juicy after 25 minutes) Sunday night...

Re: Squeal BBQ

The lack of a regional bbq style should not keep a food city like NO from having good Q. Here onthe northshore, I don't know of any good Q. there is passable Q, but nothing really good. I have been to hillbilly, but not the Joint or Walkers (I would like to go to both, but when I am in the city, to ...

Re: Rare Cuts

I have a BGE and love it. Last night, I did a raack of baby back ribs and two pork steaks, cut from the boston butt (shoulder). So good. But, a lot different from cooking steaks on an open flame (like the hibachi).

Obama is a joke. How in the world have those two not spoken. Its funny, that he says the CEO would "say all the right things". Kinda like BO did during the campaign.Truth be damned. It's too bad the joke is on contributing americans. I have been fighting to keep my formerly successful busi...

Sounds great BAM. My personal belief is that if you have developed some somewhat sophisticated taste buds, and learn a few techniques, the best dishes are those you just do. I have made fabulous stuff by just follwoing my instincts.
