Help! Le Crepe Nanou Dressing

Does anyone know the ingredients of the creamy salad dressing or the mustard-heavy dressing at Le Crepe Nanou?
I believe the mustard-heavy one is a basic mustard vinaigrette with an egg yolk. I would try mixing some dijon mustard, salt, pepper, maybe some tarragon vinegar and egg yolk, then drizzle in your olive oil. There may also be a finely chopped shallot in there. I'm not sure if they use any other herbs, but you could add in whatever you like. I like tarragon.
The main thing that gives the dressing its consistency, however, is the egg yolk.
