Recipe for Creole Chicken

Since my daughter is getting married here in L.A. at the Marriott, she wants Creole Chicken. Our family's recipe is purely a stewing hen in tomato gravy with lots of seasoning. The hotel told her to bring a recipe and the chef will make it for her.

Anyone have some good recipes? I looked on the net but too generic.

I love that over white rice. Hubby won't eat it so I never make it. No recipe, just lots of tomato and seasoning like you said.
