I am not much of a hambuger person, but I could eat a sausage burger.
Two questions
1) When I roast peppers I do them in the oven, cause of the drippings, I can put a liner in, then toss. I have a gas stove, what is the advantage of on stove top. I still char and sweat them?
2) what are you using the chile oil for. Are you going to fry the bugers in them, or are you just making your own oil for future use?

No advantage I know of. I have always roasted peppers over an open flame
The oil is used in the last stage of the recipe in putting the burger together. I will post that in the next couple of days because I am going to use the sausage burgers in a couple of different ways that I have yet to do.
