Chile Rub Pork Chops w/Strawberries and Grits

made these beauties for the first time tonight. I rarely measure and just season to taste, but I did try to write down what quantities I used.

Chile Rub Pork Chops w/Strawberries and Grits

make a rub w/chile powder, cayenne powder, achiote, cumin, mexican oregano, and freshly ground sea salt. rub onto 2 thick center cut pork chops and refrigerate for a few hours.

1/2 pint of strawberries (halved and hulled), 1 tbsp key lime juice (Nellie & Joe's), 2 tbsp sugar, 2 tbsp water and 1 tsp flour. bring all to boil in a small saucepan, stirring until it thickens. turn off heat, but reheat before serving.

boil 2 packets of each regular instant grits w/ 1 cup of water, tbsp butter, S&P.

grill chops, about 7 mins per side.

spoon grits on plate, add a chop, and top w/berries. serve w/a side of spring mix of greens, tomatoes, feta and vidalia onion dressing.

enjoy a mock sangria of lemonade, key lime juice, soda water and a splash of cranberry/black cherry juice

Hope they tasted as good as they look. FWIW, I've made quite a few key lime pies. When key limes are unavailable, substituting 1/2 fresh lemon juice, 1/2 fresh lime juice tastes far better than a bottle of Nellie and Joe's. Cheaper as well.

I didn't have any lemons or limes, so I hit the bottle.:toast:
