Sweet Basil Salad Dressing

Sweet Basil Dressing
1/4 cup red wine vinegar
1 tablespoon Dijon mustard
2 tablespoons honey
3/4 cup pure olive oil
Salt and freshly ground black pepper
12 basil leaves, cut into chiffonade
Whisk together vinegar, Dijon mustard, and honey in a medium bowl. Slowly whisk in the olive oil until emulsified. Season with salt and pepper, to taste, and then stir in the basil.

I watched Rachel Ray on the FoodNetwork the other day, and she made this delicious looking salad, so I tried it. I really wish I could have afforded the heirloom tomatoes… but I used grape tomatoes, cut in half.

I put the basil leaves in the food processor, along with a large toe of garlic, that I had already pressed. I added everything else, the oil last, until it was emulsified.

In a bowl, I cut up some English cucumber, celery, tomatoes, sliced baby bellas, and grape tomatoes cut in half. I poured some of the salad dressing over that, and refrigerated. I washed some lettuce, put it in a bowl, then just added the marinated veggies on top.

It was DELICIOUS!!!
