Dirty Rice Recipe Needed

looking for one that includes liver. my grandmother made hers with liver, but lost her recipe book in the flood. would love to relive and taste that memory. thnx!

I did find one at chowhound today that looks good, but any others are welcome for comparison and ideas. Thanks.

here's what I found:

1lb pork sausage, 1 lb chicken livers, 1 cup onions, 1/2 cup each chopped celery and chopped green pepper, 4 cups cooked rice, 1/4 cup chopped fresh parsley.
start with the sausage, then add the livers whole, and as they cook begin breaking them apart. once the meat is mixed together, add the vegetables and saute until almost soft, then add the cooked rice and parsley.

Prudhomme's:

seas. mix:
2t. cayenne
1 1/2t salt
1 1/2 blk pepper
1 1/4t paprika
1t dry mustard
1t cumin
1/2t thyme
1/2t oregano

In large skillet: (high heat, 6 min. or till brown)
2T chicken fat or veg. oil
1/2# chicken gizzards, ground
1/4# ground pork
2 bay

Add:
seas. mix
1/2c each: celey, onions, bell
2t minced garlic
Add: (stir till melted, lower heat to med. 8 min., scrape bottom )
2T unsalted butter
Add:
2C chicken or pork stock

cook 8 min. high heat, stir once
Add:
1/3# chicken livers ground (2 min)
Add:
3/4c uncooked converted (preferred) rice
stir, cover, very low heat, 5min.
remove from heat, keep covered 10 min. till rice is tender

thanks, between the two I now have a good start at making my own recipe. I have to edit for particular tastes and digestive issues for my crowd.
