Cannon's folds, new chain to open

Nothing official here folks, but I noticed upon my return from yet another week's hiatus from NOLA today that the Cannon's on St. Charles was empty and showing signs of renovation. There's a tweet from @ChefMarySonnier indicating yet another chain is to move in (NO Hamburger & Seafood). What a disappointment! Can one of you restaurant-savvy types explain why we can't get a good local fine dining restaurant in that space? There's already a chain going in at the old Copleland's two blocks away for Chrissakes. Grrr.

EC, that's what I assumed and your answer certainly makes perfect sense, but I would think that someone local like a Besh/Link/etc. could swing that and figure some way to make the numbers work. But maybe not. That's why I'm not in the restaurant biz!

It's really too bad that Greg and Mary Sonnier couldn't move into that place. With their experience and talent, and that location, it would be a perfect match.
