Re: P & J's shucking last oysters today

They're not the only oyster shuckers in town, so what gives? You will be able to count on one hand the others within the next few months. No one in the New Orleans area did the volume of P&J. They typically sell approx 60,000 per day. That would be abut 300 sacks. Good luck getting that volume ...

Re: Mardi Gras or Carnival

Mardi Gras is French and translates out to Fat Tuesday in English. The one day before Ash Wednesday! The so called "Dean" is wrong about his insistance on using the word, "poor boy". He is the only one who calls the Oak Street Po-Boy Festival a "Poor Boy Festival" When...

Re: Mardi Gras or Carnival

I'd ditto that! Grew up on the WB. We said Carnival for the season & Mardi Gras for the day. Perhaps our proximity was close enough to the Garden District! I worked for a woman who reigned as Rex's Queen. She always said, "When I was Queen of Carnival . . ." Grew up on the WB too. Was...

Re: Gershwin Prize event at White House: A really big night for Sir Paul McCartney

Well...umm...I have chosen not to speak to Tony at BP, as I was too busy speaking to Sir Paul, a much more important Brit in my book. He even dedicated a song to my wife. I had my boot on Tony's neck since day one...although Tony did not know it...ummm...because I did not speak to him... Ok, I made ...

Re: Oil in Barataria Marshes

Yeah...yeah... rub it in. The Uptown Bon Ton... Was Luther or Gal playing? I wanted to go to the Oyster Fest, but I had basically a "hurricane clean-up" after being slammed by a "microburst" storm Friday about 2:00. Had limbs and trees down all over, roof, yard and deck covered w...

Re: Do you eat hogshead cheese?

Yup, Creole Country extra hot! Vaughn Schmidt and Deanie Bowen turn out some of the best. Smoked pulled pork, no mystery meat. I like it just dipped in a bit of Scratchmo's Creole Mustard (Contact Mrs. Fury for some). No crackers. Do I eat hogshead cheese? Is a pig's azz pork? Bingo! Love the stuff...

Re: The "New" Creole Tomato

As for the cracks, don't over-romanticize the effect. It's just a healed-over split; tomatoes tend to crack a bit after heavy rains. They add nothing to the taste. Some varieties tend to crack more than others. I think the decline in taste is related to more intensive cropping and fertilizing. My a...
