Re: Cristiano's Restaurant

JAG, I have not been there, but having lived there, my old friends say that it's the best restaurant in Houma. Well, maybe the fanciest and most expensive, and probably very good. It's in the old part of town in an old house. It's beautiful. (OK, I made a sales call on them a few years ago, but not ...

Re: Shredded Cheese

Because they buy it from Sysco like that. While I'm sure the restaurant owners can buy a hunk of cheese pre-sliced, it's likely more expensive that way. So yeah....you'll get grated and you're gonna like it. :whip:

Re: July 4th holiday

Well here's how it went down. I offered everyone overtime pay if they worked friday. They decided they didn't want to work friday so the office mgr had to call all of the customers typically on the Friday route to get orders early. The staff had to work harder/faster and a little late on Thursday to...

We roast coffee and sell that and tea and many other products to coffeehouses, restaurants, grocery stores in town, out of town, out of state. Our website is pretty active, too.

Re: July 4th holiday

I talked to some of the staff and came up with a deal that might work, (and might cost me more than just giving them the day off). I'm willing to pay time & a half (overtime pay) to work 4 hours Friday morning to get the work out. I'd still pay for the holiday of course. It's hard to lose a day,...

July 4th holiday

Since July 4th falls on a saturday and your company (or your employer) normally pays for 5 holidays, what do you expect to happen for this particular holiday? Would you expect to take Friday July 3rd or Monday, July 6th off or does the employer just say "that's tough." And wouldn't this be...

Re: totally fing awesome beer tasting

Got my own beer tasting going here. Andygator. Wow. I love NOLA's brews, and not so much Abita beers, but Andygator is just too good. Watching the Tigers, too. Top of 8th. Tigers are smokin'!

Re: Coffee question

Hi, I put the milk in the pot and add extra coffe grinds in the basket. Works pretty good. Also, warm the milk a little in the microwave before putting it in the pot....so the coffee will still be good and hot when it completes brewing. Annie Laurie This method would be ok. You don't want to put mi...

Re: Coffee brewing techniques...

I just realized that my coffee could be bitter bercause I wasn't using enough coffee. Several recipes suggest 2 heaping tablespoons per 6 oz. water ...and to dilute with hot water if that is too strong. Heaping tablespoons leads to bitterness due to overextraction. I prefer to suggest specifically ...
