I was always under the impression that the "Chef's Table" was a fixed price, per person, and you were fed from a specific "chef's tasting menu", i.e. diners had very little choice of what showed up on the plate, with specific wine pairings, if desired. At least that's what I was ...

What about stopping at your local Kinko's and see if they'll give you the tops to the paper boxes? They should be about 12" X 16" and are pretty sturdy.

Are you boiling or or having someone else do it? Usually, if you are getting someone like Mr. Mudbug, they will furnish the trays you are talking about. Of course, you could also cover the tables with newspaper and just "dump em out"!!
