Re: Fermented black beans
I occasionally have fermented black beans. But you really don't want to be any where around me when I do.

Re: Need your insights
I recently had an excellent meal at Mr. John's Steakhouse on St. Charles Ave. It was good in every way. The steak was perfectly cooked, the service was spot on and the atmosphere was relaxing. It's not cheap but I enjoyed it more than my recent meals at Ruth's Chris. It's on the street car line so i...

Re: Roux in a Jar
I normally don't really measure. I just put a little oil and then add flour. Stir until it's a thick paste. But if you want a good starting point use 1/3 cup plus 1 tbls. of flour and 1/4 cup of peanut oil. This is a small batch of roux so you can use a 2 cup Pyrex cup. Just make sure that the unhea...

Re: Roux in a Jar
I have tried the microwave method but don't like it. I guess once you get a feel for it you know how long you can zap it without burning it, but I spent so much time checking and stirring the roux that it wasn't much of a shortcut. I also didn't like handling a cup that hot and finding a safe place...

Re: Roux in a Jar
I can make a roux, to any color you like, in the microwave in 5 minutes or so. And it doesn't stink up the house for a day. Since I started doing it this way I see no need for pre-made roux.

Re: Last Minute Recs for Bay St. Louis, Gulfport Area
No worries here either Mrs. Fury. Like I said, my parents enjoyed themselves. They rarely dine out. And my Mom really liked the atmosphere. The house is beautiful and the artwork hanging in the dining room is really elegant. Service was not bad either. I believe they still have the same owners. As w...

Re: Last Minute Recs for Bay St. Louis, Gulfport Area
We got to The Sycamore House right at 5:30 and were promptly seated in the main dining room. We had our choice of tables since we were the only people in the room. There were a few diners in the other room but basically the place was empty. Server arrived water was poured and we browsed the menu. I ...

Re: Last Minute Recs for Bay St. Louis, Gulfport Area
I have the geriatric seating reserved at The Sycamore House. I love having my father and father-in-law both still with me. But damn it makes it hard on weekends like this. Today, Diamonhead, tomorrow, Cut Off. My Father's Day starts tomorrow when I get home, around 7pm, with a strong pour of Pappy V...

Re: Eating in Florence
When my son lived in Rome we visited. I've eaten in nearly all of the Western European countries and Italy is by far my favorite place. The food and wine are just not matched anywhere....IMHO. Italy and New Orleans share a common trait, something I read recently about New Orleans but can't remember ...
