Re: "Tom Fitzmorris=Dining Methuselah"--Article on Tom and Vietnamese Cooking

Her article looks like a cry for help to me. She spends more time bashing the Dean's food preferences than rebutting his claim.

Is that just browned flour? What kind of flavor does it give the gravy?

Re: Roux in a Jar

I can make a roux, to any color you like, in the microwave in 5 minutes or so. And it doesn't stink up the house for a day. Since I started doing it this way I see no need for pre-made roux. I have tried the microwave method but don't like it. I guess once you get a feel for it you know how long yo...

Roux in a Jar

I know it's taboo for a lot of people, but I've recently become a big proponent of this stuff. I wouldn't use it for gumbo or crawfish bisque, but have found it to be very useful in making gravy. Stir a little into your pot roast or roast beef gravy and it makes a world of difference. It also takes ...

Re: Charlie's Seafood

I can't wait to try this place. It was one my favorite seafood joints when it was in its prime and I have no doubt the new owner will restore its faded glory. Can anyone who's eaten there describe the fried seafood for me? Like is it fried in flour, Fish Fri, or cornmeal? Is the breading/batter ligh...

I know this is something of a tangent but I hate people who get territorial about others parking on their street.

Better quality cheese.
You know you can get cheddar cheese that's not shredded.

Re: Anyone been to Mosca's lately?

Shrimp mosca is still quite tasty, but it pains me greatly to pay $32 for an order of (about a pound) of 16-14 shrimp....when I know that the shrimper is getting $2.50/lb. And why is the sausage stuffer always broken? Take the damn sausage off the menu already... I have to agree. The beauty of goin...

Re: Anyone been to Mosca's lately?

I love it but I'm a dago so it's right up my alley. I actually prefer to drink wine out of those short glasses they give you. I love their shrimp, oysters, sausage, spaghetti bordelaise, and wop salad. Good steak, too. A lot of people love their marinated crabs but I don't like picking crabs that ar...
