A friend of mine has asked me for a hot and sour soup recipe, the Chinese version. I've never made it, but I told her I'd ask the "board."

Haven't made this in quite awhile but remember enjoying it.
1/4# pork sliced into very thin strips
3-4 shiitakes, soaked, sliced thin
3-4 pieces woodear, soaked, cut off any tough sections, shred
1 cake tofu cut into thin strips
1/4C bamboo shoots, shredded
2T. scallion, finely chopped
1t. finely chopped fresh ginger (or slice and squeeze in garlic pres)
2T cornstarch mixed with 2T water
1 1/2 T.vinegar combined w/ 1 1/2T. water, 1/2 t. black or white pepper
1 egg, beaten
1T. ketchup combined with 1T.soy, 1t. salt
1T sesame oil
6C chicken or pork stock
Heat the stock
Add: all shredded/chopped ingred. except scallion
Bring to boil
Add: ketchup mixture
Add: constarch/water(stir first)
Return to boil
Reduce heat
Stir in egg, when it has coalesed into fine threads, remove from heat
Add: water/vinegar/pepper a bit at a time. Stir and taste to achieve desired hot/sour effect (I add more heat)
Add:scallion and sesame oil

This is, with out a doubt, my favorite Chinese soup.
Note that the name Hot and Sour, though most often used, is not considered by many to be the most accurate. I prefer the name Chili and Vinegar.
The only thing which may be missing in the recipe above, is the hot (chili).
