View Full Version : What's that Free Noodle Stuff they Give Ya at Kyoto2?

I had dinner again tonight at Kyoto 2, one of my favorite sushi places in the area. After ordering, the waiter always brings out a small bowl of cold noodles, with some sort of mayonaisey sauce? and little bits of cucumbers and carrots. It's complimentary and it's DELICIOUS. I know it's probably something really simple, but I LOVE this stuff. Mikimoto serves it too sometimes as a complimentary dish. Does anyone know what this is called? Also how to make it? I don't know what it is, but I love it!

I don't have a recipe, and don't know what it is called. But I've attempted to make it and have come pretty close.
I use the bean thread noodles from the Asian market that soak in cold water to prepare (have also done it with rice noodles - but I tend to like it with bean thread noodles better). I thinly slice carrots and cucumber, and lay them in the bottom of the bowl, topped with cold bean thread noodles. Sometimes I add some very thinly sliced red onions as well.
I made a dressing with mayo (just regular Blue Plate), some seasoned rice vinegar (also from the Asian market), a squirt of 'rooster sauce', a sprinkling of cayenne pepper, a dash of fish sauce (yet again, from the Asian market). Sometimes I add a drop (and JUST a drop - this stuff goes a long way) of sesame oil. My husband prefers I leave out the sesame oil. Add the dressing to the noodles/cucumber/carrot, and toss.
This doesn't come out exactly like Kyoto 2's, but it is a reasonable facsimile that scratches that itch.

Yep, sorry. I did mean Sriracha sauce.
I don't know where we got the 'rooster sauce' (well, there is a picture of a rooster on the front) ... and the Laotian guy on King of the Hill calls it that too. :)
