I made these tonight. OMG they are wonderful. A friend of mine brought over some thin skinned red potatoes from his parent's garden. Fresh and beautiful. I boiled them in salted water then made 5 of these. 3 with garlic, the garlic toasted up like candy. 1 with Rosemarry and one with taragon and garlic. They were all wonderful. The outside gets all crispy and wonderful and the inside is still all soft and great. These are so good. I can't imagine anyone not loving them. Get your oven hot, pull out some fresh garlic and herbs and go for it. The skin pieces that kinda fell off the potatoe crisped up like chips. Everything about these was awesome.

I have NEVER put a potato down, or any vegetable on a baking sheet w/o lining it with aluminum foil, she didn't do that. Am I the only one who does that?

Nope. We do that all the time. And meats too, when cooked on a sheet pan. Just for easy clean-up.

I put foil on the baking pans for EVERYTHING. It's amazing how stained they get anyway (mostly from pouring marinade onto fish, etc).

That's what I meant, I always use an aluminum (tin...HAHA) foil liner....

I made some of these with dinner tonight. The red potato skins get very crispy. I just used salt and pepper to season them and they were very good, but I might try some fresh thyme out of the herb garden next time. One problem was the potatoes I used were a little too big and broke up slightly. That didn't affect the taste!

When I did them last night, the skins were crispy like chips. So good. I ate the left overs at lunch today...YUM!

Making these tomorrow night with a steak and balsamic brussels sprouts. Dominic has asked me to make a few of 'em with Parmesan cheese.

I did these potatoes a few weeks ago with some potatoes that were left over from a crawfish boil and my family loved them.

Got those babies boiling on the stove right now. Can't wait to try them. Those pictures look absolutely delicious. I'm grilling some pork chops in a citrus rosemary marinade so I'm thinking they'll make a great side.

i did these tonight.


i brushed with bacon fat, then hit with s&p/ diced chives/ tiny dollop(sp?p of sour cream.


very good.

served with a whole roasted herbed-chicken & roasted carrots.
the chicken was roasted on a carrot/celery/garlic/onion rack w/ stock
& wine.....blended up the 'rack'> filtered> melted a pad of butter> serverd
as sauce. mmmm....


simple, perfect, and fed the family for under $20.

Mucho thanks to JAG for sharing this recipe. They were delicious even though I probably didn't use as much salt as I should have (oversalted a dish this week and have been a little gun shy since). I'll definitely put this in the side dish rotation.

Grins. we are a potato loving bunch! I'm also doing these tonight. Grilling some pork chops, have the green beans on the stove already..then the potatoes.

Just made homemade ice cream. It's in the freezer waiting for tonight.

I'm laughing at this.... I sent an email with your Pioneer link to probably 20 people..... most of them already wrote back to say that they were making them this weekend!

JAG, Lisa made these friday night just based on me telling her how they were supposed to be made. They came out really well!! Had them with grilled chicken. Really cool.

These were absolutely OUT OF THIS WORLD. Used plenty of olive oil, kosher salt, cracked pepper, parmesan cheese, Hormel bacon bits and big slices of garlic.

Oh, jeez. The husband was in heaven. Put a blob of sour cream on each one before eating.

WOW.

Best ever, kiddo. You done good. ;)

OMG is all I have to say! Something this simple...how could we not have come up with this one before now?? I did mine with olive oil, lots of kosher salt and black pepper, garlic and fresh rosemary...put a big ole dollop of sour cream on mine..Doug liked his better without the sour cream. I was seriously considering going the same route as Nanette and putting bacon bits on them....but was already having pork chops and figured that our arteries would just curl up and die if I added anymore.

Great recipe...I've been sitting here trying to think of other things to serve with them...I'm thinking steaks next time!

Let me tell you about our "steaks".

For the first time, I bought a "SHOULDER TENDERLOIN". Coated in peppercorns. Paid about 12 bucks at Winn Dixie. (Dunno, maybe a pound and a half??)

Turned out to be 4 seperate little steaks. Cut them to make a total of 6 petite steaks.

WOWIE ZOWIE!

They were delightful.

I wouldn't/won't hesitate to serve them to guests. :)

I do these on the grill. put the potatoes on foil drizzled with olive oil. they roast up nice and you won't have to heat the kitchen.
