No, I'm not talking about transfiguration, I'm talking about terrine.
I had some of Pete Vazquez's lamb terrine last night a my shop and as I was looking at his last three loafs of terrine in my cooler I thought to myself "Holy crap, that's the last three loafs of Pete's terrine I'm going to have!"
So, if anyone is bemoaning the loss of a true renaissance man on the New Orleans restaurant scene all I can say is there's still a taste of him left, for now. I'm really going to miss this truly artisanal nature of these products.
