I went grocery shopping this morning in search of something...just wasn't sure what. My son just had dental surgery so my options are limited. Ended up with chicken...can't decide on chicken and dumplings or chicken noodle soup. Doesn't even sound appetizing..does it? Any ideas on a dish that I can fix for this helpless and pitiful 21 year old? Grins...yes, I've had about as much of the pitiful act as I can take. I'm ready to smack him upside of the head and tell him to toughen up. It's amazing how well he becomes about the time the sun goes down and the girlfriend shows up at the door.

How about a nice, soft, gooey, chicken salad?

for my root canal, I lived on pot stickers and egg drop soup from Oriental Triangle.

for something more savory, here's an easy chicken dish:
Coconut Chicken Curry

3 boneless, skinless breast
1 can low sodium chicken broth
1 can low fat coconut milk

To Taste:
Curry Powder
Garlic Powder
Lemongrass Dried Spice
Red Pepper Flakes
Basil Dried Spice
Ground Ginger

Of course, chicken thighs taste better, richer.
So use either per preference.
If I can find a dry powder coconut soup mix, I'll use
that and add seasonings to taste. I have never
measured, so I start small and add where needed. I
very rarely add salt to anything, but a pinch will
bring out the flavors of the other spices.

If I was cooking this for just me, I would caramelize
onions and garlic in olive oil first, then add
ingredients, and add shrimp at the last minute. Then
before serving, top with fresh basil ribbons.

Cook time depends on if you cut up the chicken before
adding to soup mixture. And depending on if you want
it for a curry over rice or as a soup, you can adjust
or add amount of liquids.

Sorry this seems vague; but I have always made up my
recipes as I go along each time.
