FWIW, when I picked up my whole prime ribeye, they said they will gladly dry age, trim and cut primals for free. Bone in takes 35 days.

This place is a keeper! Hands down..the best steaks we've had since we moved down here. Will be going back for a brisket the next time Doug feels the urge to smoke something.
